Made this tonight with the cucumber addition and ate it on the porch while my dough proofed. 'Lemon until it argues back' turned out to be exactly one half lemon for me too. Your mother is a scientist.

Home baker here and the honey water bath is the detail people miss. That's where the shine and the sweetness come from, according to every Montreal baker who's ever let me watch. I've tried it in my own kitchen and gotten maybe 70% of the way there. The wood oven is the last 30% and I can't exactly install one.

Home baker chiming in to confirm and to drop the useful part: retrogradation happens fastest at fridge temperatures, so the fridge is the worst place to keep bread — it stales faster in there than on the counter. The freezer, on the other hand, basically pauses the whole process. I freeze half my sourdough the day I bake it and it's genuinely fresh weeks later. Counter for a couple days, freezer for the rest, never the fridge.
