My mother's summer chaat 'recipe' is a list of vibes and I finally decoded it

Every July when it got too hot to cook, my mother made chana chaat. When I asked for the recipe I got: some chickpeas, some onion, tomato, whatever chutney is around, chaat masala until it tastes right, lemon until it argues back. After three summers of testing, 'until it argues back' means about half a lemon per can of chickpeas, and 'some' onion means less than you think, soaked in cold water for ten minutes so it doesn't bully everything else. Add cucumber because it's July and cucumber is basically free right now. No stove touched. Eat it cold on the balcony and call your mother.

'lemon until it argues back' is going directly into my vocabulary. That's how my aunt measures vinegar in her chow chow and I've never had a better description of it.

The onion soak is real. Ten minutes in cold water takes the raw meanness out. I put soaked red onion in almost everything now and my family has stopped filing complaints.

Salt by sound is elite. My mother tastes nothing while cooking and corrects everything at the end like an editor. Terrifying accuracy.

Made a version of this after reading your post, added extra chickpeas because protein brain, ate it in front of the fan. 10/10 no-stove lunch.

Made this tonight with the cucumber addition and ate it on the porch while my dough proofed. 'Lemon until it argues back' turned out to be exactly one half lemon for me too. Your mother is a scientist.
