Heat wave meal prep: five lunches, zero oven
Kitchen hit 29 degrees this week so the oven is legally decorative until September. This week's no-cook rotation: overnight oats two ways, a big batch of chickpea salad with feta and cucumber, cold soba with peanut sauce, and tuna white bean salad that takes four minutes including the part where I stand in front of the open fridge for morale. Only heat involved is the kettle for the soba. Everything keeps five days. Highly recommend making lunch at 7am while it's still cool and feeling smug all afternoon.

As someone whose entire hobby is a 250 degree oven, July is my villain era. Cold soba might be the peace treaty.
Add quick-pickled red onion to the chickpea salad. Ten minutes in vinegar and a pinch of sugar while you assemble everything else. It's the difference between lunch and Lunch.
