Tomato season is coming, start practising your no-cook sauce now
The greenhouse tomatoes at the market are already decent and the field ones land next month, so consider this your training montage. The summer sauce in my family: ripe tomatoes chopped and salted in a bowl with torn basil, a clove of garlic you grate in and then question, good olive oil, and nothing else. It sits on the counter for an hour while the salt pulls the juices out. Hot pasta goes straight into the cold bowl. The heat of the pasta is the only cooking the sauce gets. My nonna called it salsa cruda, I call it the reason August exists.

Completely agree, hence training montage. Practise on greenhouse tomatoes, peak on field tomatoes. You do not run the marathon in week one.
On fait la même chose avec les tomates de mon beau-frère en août. One hour on the counter, pas plus, pas moins. The bowl juice at the end with bread is the real main course, le pasta c'est le prétexte.
A grated clove of garlic you then question is the most honest ingredient line I've read all year.
