First properly cold Sunday is coming, so the salt beef goes in to soak tonight
Jiggs dinner is a Sunday meal and a cold weather meal, and this weekend finally qualifies on both counts. For the mainlanders: salt beef, cabbage, turnip, carrots and potatoes all boiled in one big pot, with pease pudding cooking right in there alongside it in a cloth bag. The beef goes into a pot of cold water in the fridge tonight and gets a water change in the morning, or the whole dinner tastes like the North Atlantic. Split peas go in the pudding bag and hang in the pot with the beef for a couple of hours, then get mashed with butter and pepper. Vegetables go in by how long they take, turnip first, cabbage last. Figgy duff if you've got the ambition. I usually don't. Nan's rule was that whoever carves the beef gets the first slice and whoever washes the pot gets the second. Nobody has ever once fought over washing the pot.
